Keith Knauf jokes with L.C. about his healthy appetite. Keith was the pastor of an affluent suburban parish when he first volunteered at the hospice. Seven years ago, he quit his job and became the chaplain.

Keith considers the hospice "a place of healing, not of dying."
He often works late into the night contacting inmates' families all over the country, helping them to reconcile with their dying relatives.
